All those restrictions, laws and warnings are there for Belgian meat as well. Still the product is sold as ready-to-eat and people have it almost daily. I've never heard of anyone getting sick. Could it be there is a greater immunity?
But so it would be your impression too that Americans in general are repulsed by eating raw meat? And for rational reasons.
I wonder in which other countries/cultures raw meat is consumed as often as in Belgium (and neighbouring countries: in France and The Netherlands too "toast cannibale" is on the menu).

Anyway, I am a sushi lover and although I do not eat raw meat as often as I eat sushi, I have tried it and I enjoy it!
As I say to my friends, when they put a funny face when I tell them that I eat sushi ( actually these are acquaintances, since ALL, I repeat ALL my friends love sushi! Japanese as well as non-Japanese), it is the best guarantee to eat the freshest fish you could ever get!
Any cook would know that, one can still cook a piece of meat which is a few days old and still eat it. Yes, while if you are eating sushi, you can only have it when it is the freshest!
Anyway, my point is, that whether it's meat or fish, or even veggies, when they are fresh with no hormones and any of the "funny stuff" they put in the US, you can pretty much enjoy everything raw! and you actually get to taste the true taste of that ingredient!! ![]()

I heard that in Japan raw chicken is also consumed, like sushi. It is even served in sushi restaurants... Is that true?

You are always right!
Yes, in some of the best Sushi restaurants they have this speciality, which is raw chicken. However, it is cooked on the outside and the inside is raw. So think of a rare roast beef, something along those lines.Or the carpaccio which the Italians adore!
As you know Japan can sometimes be a "freak" in hygene, so only certain restaurants which are certified, are allowed to prepare this chicken, just like the poisonous blow fish.
So, if you go to Japan, and are offered raw chicken, think of it as a great honour that you were invited to an exclusive restaurant!
I think, whether it's raw meat or any type of food which one is usually not accustomed to, one should definately try it once! you never know, you may love it! and as I say the best way to get to know a country and its culture is through its cuisine!! so enjoy!

I ate raw chicken in Japan, uncooked on the outside and everywhere else. However, even in Japan it is a very rare (pun intended) delicacy and always prepared by people who know what they are doing. Only a particular type of chicken is used (Nagoya koshien?)--not what you would pick up at your local butcher. I lived 5 years in Japan and only ever came across this chicken sashimi once. In college I immedeatly took to sushi, then sashimi, and Steak Tartar (ground raw steak + raw eggs + vodka or gin, mixed together and served with toast, diced onion, and capers.)
Recently, I have been eating my chicken a hair undercooked as well, but it is tough to enjoy it given all the scare tactics I was raised around.
I would absoultly love to sink my teeth into truely raw chicken, or even pork, but have not a clue about how to start so I don't catch some sort of horrible food poisoning :P
Maybe I should just take my next vacation in Belgium.

I started on a healthy version of the standard American diet (no fried food, no soda, no cake or chips). I turned whole food philosophy vegan as an early teen. It helped my strength, weight and clarity. Mid twenties I did vegan livingfoods for a year. Fantastic. Mid thirties long term fast of only water. Back to regular vegan. It came a time I needed more because of outer stresses. I do Von der Planitz Primal Diet now. Nonpasteurized milk from grass grazed real mother animals, raw eggs of several kinds, nonfiltered/nonwarmed honey, raw never previously frozen grass grazed poultries, etc. It's difficult to believe such a strength giving safe way is right under our noses, but we've been programmed that it's a no-no, by illogical scare tactics.

thank you for sharing with us your culinary/health path. I admire your courage, sense of experiment and what must be a great self-discipline.
One question: where do you get all these foods? Unpasteurized milk, for instance, I would have no idea where to get that here (in Boston). And is it legal for those shops (?) to sell you these foods? What with the over-regulation of the comon diet by institutions that are lobby-ized by the processed-foods industry, I am imagining this must be quite an "underground diet"... or am I wrong?
I wish you all the best in your quest for finding the optimal diet.

I'm curious about the primal raw diet you mentioned. Can you give me more information about it? I have eaten raw before and have felt very good eating that way, but only ate meat in the form of raw fish. Now I eat everything raw except other kinds of meat, but would like to know how I could eat that raw, too. And considering how difficult it has been for me to find a source for raw milk, I'm wondering how to find these other things you are talking about like the grass grazed poultries. Any other tips for eating raw meats and eggs?
