I ate raw chicken in Japan, uncooked on the outside and everywhere else. However, even in Japan it is a very rare (pun intended) delicacy and always prepared by people who know what they are doing. Only a particular type of chicken is used (Nagoya koshien?)--not what you would pick up at your local butcher. I lived 5 years in Japan and only ever came across this chicken sashimi once. And by the way, I didn't get sick.
