Hi Katrien!

An excellent and interesting article! I definately see the Belgian cynicism a bit, happy

Anyway, I am a sushi lover and although I do not eat raw meat as often as I eat sushi, I have tried it and I enjoy it!

As I say to my friends, when they put a funny face when I tell them that I eat sushi ( actually these are acquaintances, since ALL, I repeat ALL my friends love sushi! Japanese as well as non-Japanese), it is the best guarantee to eat the freshest fish you could ever get!

Any cook would know that, one can still cook a piece of meat which is a few days old and still eat it. Yes, while if you are eating sushi, you can only have it when it is the freshest!

Anyway, my point is, that whether it's meat or fish, or even veggies, when they are fresh with no hormones and any of the "funny stuff" they put in the US, you can pretty much enjoy everything raw! and you actually get to taste the true taste of that ingredient!! happy
