The Tomatina gets very rowdy, as it is mostly an occasion for teenagers and young adults. But if you can be content with staying on the fringes of the real action and looking on (you will get splattered, though), it would also be fun for your daughter. Also keep in mind that the little town gets extremely crowded, so take care not to lose one another.
As for accomodation. Last time I checked, Bunol has a youth hostel, but not much else (it IS a tiny town). There are some typical "autoroute motels" close by (in the range of 10 miles): Ibis, Novotel, those chains. Your best bet would be to stay in the beautiful city of Valencia, which is about 21 miles (40 km) from Bunol. You'll find many more accomodation possibilities there. I'd look for particular places on the net. You can then make Bunol a daytrip (be sure to buy a train ticket or rent a car well in advance).
